I'd go for Engineering since it provides you with alot of cool gadgets that'll help you in PvP. You'll need mining here too, to gather materials for your stuff. Yeah, you can sometimes buy the materials in the AH, but it just makes your life alot easier when you can gather them yourself.

It's not a big money-maker proffession though. If you want to make money you're better off with Skinning/Mining.
