iv done the quest where u kill the parrot and give the guy the item but what do i do after that :S

Speak to the Orgrimmar rogue trainer. Make sure you are level 20 or higher.

one more thing do i have to pick pocket the key and how do i do this if i have to he keeps seeing me even when i seek up behind him

Yes you have to PP him, it wasn't possible for me to do it at 20 (I didn't try MOD) I went back at level 23 and was able to get the key easily, did the rest with a warrior.
