What is prefered?

Tailor/Enchant seems nice combo.... but whats best for early advancement and endgame?

Is herbalism/alchemist worth it?

I have yet to find a reason to get Tailoring apart from a one-time-only buy bag refresh. Enchanting is nice since every capped player will want some buffs to their gear but then again, I wouldn't want to have a profession that isn't used constantly. I prefer Engineering and Alchemy because I like things that go boom, and paying 3g for 5 Swiftness potions at the AH is a bit too much.

It's handy to have yeh ^^".

I ment, either Mining + Engineering or Herbalism + Alchemy is more useful and used than Tailoring + Enchanting in my opinion.

Herb/Alch are very easy. When I was low 50s I went 1-300 in just a few days. I bet if you were hardcore about it you could hit 300 (since you can make potions in the field while gathering) in 20 hours straight (maybe less).

Its nice that I can provide my whole group with potions (if I spend a little time gathering before I log).
